Reypenaer, a rare variety of aged Gouda, is a cheese with intense flavour and smoothness. It is creamy, lingers in the mouth and has exceptional aromas.
Many factors contribute to the unique taste of Reypenaer:
We are a small Dutch cheese dairy, with 3 generations of cheese making tradition and expertise behind us.
Wherever possible, we use the milk from cows grazing in the province of Noord-Holland, where behind the dunes, the soil is extraordinarily fertile.
This is because of the frequent flooding of the plains in the past. In this region, the grass is extremely soft, and is well known for resulting ‘soft’ dairy produced from its pastures.
Each cheese is naturally matured in our 100 year old custom built cheese warehouse, using only natural variations in temperature and humidity.
Each maturing cheese is individually hand turned, every week by the cheese master.
Our classic Reypenaer cheese is matured for 1 year.
It has a soft and creamy flavour that lingers on the palate.
Reypenaer VSOP is matured for about 2 years.
It sheds approximately 25% of its original weight. It has a superb flavour and aroma.
Our limited edition Reypenaer XO Reserve is extra matured. It has a uniquely rich, pure flavour that lingers on the palate.
