We have 6 fantastic new flavoured cheeses for you to try. Here at Wijngaard, we know as well as anyone that a good cheese stands alone. Nevertheless, we find the idea of adding a unique flavour to a great cheese very exciting – it gives our taste buds a thrill. In addition, the combination of vibrant colours adds an extra dimension to the cheeseboard.
In producing these flavoured cheeses, we have carefully selected herbs and spices, ranging from exotic ginger and gourmet truffle to colourful sun dried tomatoes. We add these to the cheese during the aging process.
Chèvre Rozemarijn (Goat’s Cheese with Rosemary)
This is a four month old, traditionally matured goat’s cheese which is ripened with rosemary. During the aging process, the flavour of rosemary is absorbed into the cheese. We think you will find the resulting taste wonderfully balanced.
Oude Affiné Gember (Old Affiné with Ginger)
This speciality cheese is traditionally matured with ginger for 10 months. During the natural ripening process, the ginger permeates the cheese and releases its flavour. This is a cheese of depth with a full flavour, which the ginger perfectly complements. Old Affiné with Ginger was a gold medal winner at the Nantwich Cheese Show 2010.
Affiné Zwarte Peper (Affiné Cheese with Black Pepper)
Our Affiné cheeses are traditionally matured. Our special cheese caves are used for the ‘affinage’ or aging. These are superior cheeses, aged for 4 months. In terms of flavour, the soft and creamy taste of the Affiné combines perfectly with the flavours of the black pepper corns. This cheese won a silver medal at the Nantwich Cheese Show 2010.
We have three more speciality flavoured cheeses from our Affiné Collection, each matured for four months. The Affiné Zontomaat Bieslook (Affiné Cheese with Sun-Dried Tomatoes and Chives), where the soft and creamy taste of the Affiné elegantly combines with the flavours of sun-dried tomatoes and chives. The Affiné Mosterd Dille (Affiné with Mustard and Dill) is a taste sensation of soft and creamy cheese offset by the crunch of the mustard seeds. Finally, we have Affiné Truffel (Affiné with Truffle) – our truffle cheese, which is a perfect marriage of cheese and truffles. We add a truffle tapenade to the cheese before aging allowing the flavour of the truffle to permeate the cheese and well, you just have to try it!
Our speciality flavoured cheeses are available for tasting and to buy at the Reypenaer Proeflokaal (Tasting Rooms) in Amsterdam. We are open every day except Tuesday.
