Reypenaer VSOP is our showpiece. This cheese is matured for about 2 years and sheds approximately 25% of its original weight. The white spots we see on the surface indicate the start of mineral and protein crystallisation. Aroma and flavour are superb.
This cheese is also available in whole cheeses, 1/16 pieces and as 'cheese boards'.
