Wyngaard Affiné Jong Belegen is traditionally aged for 10 weeks in natural climate fluctuations, similar to the conditions in the old cheese warehouse in Woerden. The natural variations in temperature and humidity play an important role in the maturation process and contribute to the development of the cheese's flavor.
